Three Friends' Brown Ale


This Brown Ale barely made it to 1.040 and is not as strong as most of my beers. However, it has a great light flavor and low hops. It is very close to an English Brown Ale, yet not as tangy as the classic, English example, Newcastle Brown Ale. It is an easy drinking beer for meals and probably won't last long enough in the bottle to make it to a competition!
The name comes from the brewing trio that made it: brewed by my cousin, Peter Chocholak, Dr. E.F. Tonsing, and myself--three brewing friends!
Type:Grain recipe; Amount: 4 gals.
Grain Bill:
- Final 5 gallons of sparge from 14.5 lbs. 2-row pale malt extract
- 1 lb. 90 degree Crystal Malt (steeped in 150 degree water for 20 min.)
- 2 oz. chocolate malt (steeped in 150 degree water for 20 min.)
- 1 lb. DME
- 1/2 lb. Dark Candi Sugar
- 1/2 oz. Bullion hops (8.2% AAUs) boiled for 60 min.
- 1/2 oz. Target hops (6.4% AAUs) boiled for 60 min.
- 1/2 oz. Bullion hops finishing
- 1 tsp. Irish moss, 10 min.
Other Specifications:
- Yeast = Whitelabs London Ale yeast (WLP013) plus the settled yeast from the secondary of batch #43.
- 11 day primary fermentation at 68 degrees
- 4 day Secondary fermentation at 68 degrees
- Original Gravity=1.040
- Terminal Gravity=1.006
